Easter Cotton Honey Glaze Minicheesecakes

This was something i plan for weeks, no doubt that the outcome still needs to be improve but overall those who ate it feels satisfied. Those colourful toppers are real quails egg. I did that is because this whole cake process does participate by my elder daughter. She likes seeing cute fancy things so i thought that just give it a shot and after the thinking about the time that we have wasn't so much, i never manage to get the shoestring licorice and some jellybeans from candy shops on the island so just as usual using my food colouring i did this using the sharpest colour i have on hand, just four of it.

The funny thing is i have a different size of tray of the cakes so it came out unbalance for three of the cakes but manage to pull through just for eating purposes.

The funny thing is that those eggs when they put it up while i guess the frosting to try holding it so it won't toppled over when transporting down to my in laws place, when they put one on top of the mini cakes they put one in their own mouth as well, they enjoy them self so much helping me to complete the box of mini cakes after all.


It's cotton cheesecakes but i make into two layer, where i can spread the glaze in between and just the toppers purpose just to keep it as light as possible for health purposes and it won't feel too much or too rich for any of us to consume.

Chocolate Bar Cheese cuppies


This is made specially for my kids and some of their friends who is coming for our Easter Luncheon. It tuns out satisfied even the look wasn't that great after the play they put on the cake the night before when i about to put into the oven for baking.

The taste is just divine, i used fine brown sugar and yet lessen the original amount because i was using semi sweet chocolate, the moisture of it is because of the milk.

The cream cheese in the middle was just nice to blend with the semi sweet moist chocolate. Soothing to the throat and it's OK if anyone want more then one helping.

About the lifespan of this cake it does surprise me, it lasted for a week, it's just great for parties, even with the cheese it's OK to just let it rest outside without putting into the fridge, but to those who love it chill it also does keeps the moisture intact maybe it's because of the cheese coating and the paper cups which just restore the original flavour and moisture without drying it out.

Cappucino Cream Cheese


This cake doesn't really exist in any recipe book, Just thought of it and came to my mind a specially made for my brother in-laws birthday, but this cake really tested my skill and experiment and learn from mistake to make this looks presentable and definitely you won't get it outside, unless you custom made for yourself to present to someone close to you.

Just don't misinterpret but this design my daughter thought for their uncle and our family's love bird, no doubt that is just my brother in laws birthday but this cake meant for two, himself and my sister in law to be.

At first no planning to do anything special for it is an Easter week and i was busy preparing for Easter instead for his birthday so i got myself sometime left and i came to this when i just saw a cappuccino mouse powder in the baking shop so i thought just giving it a shot and it looks bad, tasted just OK for me but just too mild and stupid to trust the shop that i got an original powder but got conned and it turn out that i added few tablespoonfuls extra but yet still wasn't good enough and the looks are really disappointing.

I guess i will make this a real lesson to improve more, if given more chance. Happy trying, hope they like it.

Carrot Mixnuts



This carrot cake is specially made for my auntie when she bought back a lot of walnuts from her Hong Kong trip last two weeks, so she just ask me if i know the recipe of this special carrot cake. It's lot of shredding and work to be done but the best thing is it's egg less and it blend with brown sugar so it's vegetarian and is suitable for diabetic consumer.

So i just mixed it all not only with walnut but hazel nut and almond. I think the secret hidden ingredient is still the cinnamon where not everyone likes the spice taste, but without it it doesn't taste as good as the original carrot cake where i first tasted in New Zealand, 7 years ago during my own honeymoon.

Well it can be serve warm, or cold, some will just enjoy it by itself but some do like to blend in with the warm and cold scoop of ice cream or just some cold condensed milk will be great.

Banana Chocolate


This is for my girls, they love chocolate so much that they have to see to eat it, but instead of always black, i have extras bananas on that particular day so i tot of just a blend with the good fruit which is rich with vitamin for them would be just great.

Just moist enough and which surprise me is the chopped chocolate pieces turns out to be just as delicious as the chocolate molten, in fact better which wasn't too sweet or too heaty to consume even more then one serving.

I did this after making the plain banana for my uncle down in KL. So instead of doing for people i did it for ourselves as well. Just good with a cup of tea or coffee for the evening.
